This is how Alma Mestiza was born: a new offering from Mestiza Polanco that celebrates Mexico through one of its greatest symbols, the taco. Corn, fire, sea and different influences come together in four creations made for sharing and discovering the many flavors of the country. It's the first chapter of a story that begins this October.
Four Tacos, Four Stories
The taco changes from one region to the next, and so do its ingredients, techniques and ways of enjoying it. To open Alma Mestiza, we brought four flavors together on a single journey: shrimp, short rib, beef tenderloin with La Ramos chicharrón, and octopus. Four different tacos that show the diversity of our cuisine, one bite at a time.
Shrimp Taco
The flavors of the sea come to the table in a fresh, bright creation. Shrimp takes center stage in a taco that celebrates the flavors of Mexico’s coasts.
Short Rib Taco
The fire of the grill reaches the tortilla. Short rib, with its Latin American flavors and technique, becomes an intense taco full of character.
Beef Tenderloin Taco with La Ramos Chicharrón
Two bold ingredients come together in one tortilla. Tender beef tenderloin meets the rich taste and crispy texture of La Ramos chicharrón, creating a hearty taco full of character.
Octopus Taco
Sea and fire come together in a taco where octopus takes center stage. An intensely flavorful creation that brings another expression of Mexico’s coastal cuisine to the Alma Mestiza journey.
