Mestiza Polanco presents Taco Omakase, a seasonal dining experience where Mexico is told through seven courses, seven tacos, and seven guest chefs. Each course offers a different interpretation of the Mexican taco, created by a different chef, while the full journey unfolds as a tasting menu served with sequence, rhythm, and an additional dessert to close the experience. The proposal is for a defined period and is lived with reduced availability per day.


Seven Courses Through Mexico in the Heart of Polanco

Located in one of Mexico City’s most exclusive neighborhoods, Mestiza Polanco is the perfect setting for this tasting experience. Guests do not choose individual dishes; instead, they follow a seven-course journey designed so that each step introduces a different technique and flavor profile. Zarandeado-style grilling, carnitas-style confit, comal-toasted preparations, mole with café de olla, hoja santa, and a glazed finish with piloncillo and dried chiles create a journey through different regions of the country. Guided table service sets the pace for an experience lasting between 60 and 90 minutes, unfolding as a continuous narrative rather than a collection of separate dishes.

Seven Tacos, Seven Interpretations of Mexican Flavor

The seven tacos in this journey are designed as a true contrast from start to finish. Pacific Ember opens the experience with octopus and shrimp zarandeado-style; followed by Baja California Sea, featuring tuna confit prepared in a carnitas style. Central Comal brings short rib with avocado cream; Mexican Pot introduces mole with coffee and charred elements. Oaxaca Green presents beef tongue with almond sauce and hoja santa, Highlands Sweet features pork cheek glazed with piloncillo and dried chiles, and Campechano Taco closes with shrimp and chistorra. Seven tacos, seven techniques, and one unified canvas: Mexico expressed through its cuisine.

Each course of the Taco Omakase in Polanco is signed by a guest chef with an established career: Alejandro del Águila, Christian Delgado, Sean Grundey, Rodrigo Sánchez, Vicente Torres (with a Michelin-starred background), Enid Vélez (Best New Chefs 2023), and Alex Cuatepotzo.
